Done as tradition dictates; our agaves grow between 6 and 7 years so that they have the ideal maturity and concentration of sugars. This allows us to work only with quality raw material that offers a good final product. We take great pride in our attention to detail from beginning to end.

AGAVE SELECTION

We use 100% Agave Azul Tequilana Weber. While the majority of our previous batches utilized agaves from the valley of Jalisco, our dedication to excellence extends beyond one specific region. Instead, we are open to selecting agaves from within the origin appellation that exhibit the desired quality and sugar content. This approach allows us to choose agaves from various areas, ensuring that each batch embodies the essence of exceptional agave, wherever it may originate.

MATURITY MATTERS

The maturity of the agave plant is pivotal. Sugar content, which varies with age, directly impacts the flavor profile. We meticulously select agaves at their peak, ensuring optimal sugar levels for a balanced taste.

COOKING

Our autoclave, constructed from stainless steel, is used for cooking agaves with steam injections. This 16-hour process, followed by 8 hours of cooling, ensures a clean product, letting the agave's natural flavors shine through.

JUICE EXTRACTION

We employ a roller mill to maximize sugar extraction from agave fibers, ensuring a rich, sweet foundation for our tequila. We reuse the fibers for composting.

OPEN AIR FERMENTATION

Magic happens during open-air fermentation. This process, driven by ambient conditions, introduces variations that can subtly alter flavors and aromas. Uncontrolled factors, including ambient bacteria and fungi, contribute to unique tastes in our tequila.

DISTILLATION

Our tequila undergoes two rounds of distillation in stainless steel stills. During this process, we meticulously "cut the heads and the tails," removing undesirable flavors and aromas to attain the perfect balance. The resulting product, which we call "the heart of the spirit," embodies our commitment to purity.

MATURATION

Tequila Atanasio ages in American white oak barrels, commonly previously used for bourbon. Reposado ages for 3 months, while añejo ages for 13 months. Our approach is conservative, aimed at elevating the agave's flavors while maintaining a harmonious balance with the oak's nuances.

PACKAGING

Each bottle has been labeled and sealed by hand. You will find the signature of our master tequilero René Carranza along with the year and the lot to which it belongs. There’s a special bottle made and waiting for you.
